Dayglow
(Los Angeles, USA)
Dayglow Coffee Roasters is a boundary-pushing specialty coffee company founded in 2017 in Los Angeles. It began as a café showcasing top roasters from around the world. Now roasting its own coffees, Dayglow remains rooted in curation, collaboration, and discovery. With locations in Los Angeles and Chicago, it focuses on limited releases and innovation, redefining the coffee experience and encouraging exploration beyond the familiar.
Ever since their humble beginnings as a lone cafe in Los Angeles, we have been admiring Dayglow’s whole approach, making them the perfect pick from the USA for our first global edition. Their offering is very exciting indeed a washed Colombian coffee from renowned producer Jairo Arcila. Featuring indulgent notes of vanilla and melon, with layered sweetness that creates a truly captivating and memorable cup.

Farm: Castellon
This coffee was grown by Jairo Arcila at the farm Castellon. Cherries were exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved. This variety was discovered in Inza, Cauca. This unknown variety had a higher yield and was more resistant. After the seeds were studied by a laboratory in London which found that the genetics and structure were similar to Bourbon Aruzi, a variety grown in Ethiopia.
Create Coffee Roasters

Create Coffee Roasters was founded by the renowned coffee expert and 2014 World Brewers Cup Champion Stefanos Domatiotis. His roastery is driven by innovation and craftsmanship, viewing coffee as both a creative and technical pursuit. Focused on exploration, Create highlights each origin’s unique character while pushing boundaries in flavour and expression. Working closely with producers, they emphasise transparency and quality.
We’ve long held Create’s work in high regard and are excited we can finally visit Greece to collaborate with them. Their Chiroso, a rare varietal, is a real stunner too. A natural Colombian coffee that offers a bold, expressive aroma that opens into a balanced cup—sweet, bright, and clean, with subtle funky notes. It begins intensely and complex, finishing delicate and refined.

This lot comes from Finca Las Flores run by a renowned producer, Johan Vergara. Since being featured in the 2006 Cup Of Excellence, Johan has transformed the quality of coffee by planting exotic varietals including Pink Bourbon, Tabi, Sidra and Wush Wush.
Chiroso is a relatively new variety, which originated in the Urrao region of Antioquia in Colombia, and very rare being a mutation of an Ethiopian Landrace. It is a nutritionally demanding coffee. It needs to be harvested at least four times a year, but it more than makes up for this with its high productivity.
Pontes Coffee
(Copenhagen, Denmark)
Copenhagen’s newest micro-roastery, Pontes Coffee Roasters is built on connection through coffee. Founded by partners from Santa Cruz, California and Copenhagen, Pontes blends relaxed Californian influence with clean Nordic design, whilst drawing inspiration from Portugal’s warmth. Its name, meaning “bridges,” reflects a mission to connect people and cultures.
Copenhagen’s coffee scene is highly respected but it’s rare for a new roaster to emerge, making Pontes a particularly exciting discovery. Their “Little Gems,” a red honey Costa Rica, stood out for its delicate sweetness and creamy body. Subtle almond notes and gentle white florals linger in a clean, approachable cup—beautifully expressing Pontes’ thoughtful and refined roasting style. An unforgettably elegant coffee.

Farm: Finca Toñita
Finca Toñita is a microlot representing the vibrant coffee culture of Costa Rica’s Los Santos region. Nestled at ideal altitudes between 1300 and 1500 meters above sea level, the farm benefits from a microclimate that creates a steady, balanced maturation of the coffee cherries. After Olman Ureña Salazar and his team carefully harvest the ripest fruit, the coffee is transported to the innovative Palmichal Micromill. Here, precise sorting and thoughtful processing preserve the qualities of the beans, so that that the Costa Rican terroir and Olman’s hard work translate perfectly into a very clean and expressive cup.
Meron Coffee
(Cluj-Napoca, Romania)
Meron Coffee Roasters is a key force in Romania’s third-wave coffee movement. Founded in 2015 by Bogdan Ciocian in Cluj-Napoca, it began as a single café and has grown into one of the country’s most recognisable specialty coffee brands. Inspired by its name—derived from the Greek word for “day”—Meron promotes mindful appreciation of the present moment, turning coffee from a routine into a ritual through consistency, care, and respect for its origins.
We are delighted to feature an exceptional Brazilian coffee from Meron. It offers a refined profile with surprising hibiscus-like acidity—an uncommon brightness for Brazil—balanced by soft floral and herbal notes. Oh, and did I mention it’s a Gesha too? Bright, crisp, uncommonly elegant, and our first ever Brazilian coffee to make the grade for the Coffee Club!

Homero Aguiar Paiva named the farm Fazenda Guariroba after his maternal grandparents. With the vast knowledge and experience of the family and due to the rich soil and the soft weather with regular rainy periods the coffees from Fazenda Guariroba developed a distinguished flavor and unique characteristics. Today, under the management of Gabriel Lamounier Vieira and Elisa Paiva Lamounier, Fazenda Guariroba represents Brazilian coffee internationally, being recognized as the Cup Of Excellence champion farm.
