Liquid Dream

(Cologne, Germany)

Liquid Dreams is a small specialty coffee roastery from Cologne, started by two friends, Julian and Max, who turned their shared coffee obsession into a project. They focus on finding unusual, high-quality coffees and roasting them in small batches, mainly for filter brewing so the flavours really shine. It’s all about trying exciting coffees without needing big bags, keeping things fun, transparent, and a bit nerdy.

When we found them we were very excited that our philosophy completely aligns with theirs, and we selected their exceptional Kenyan SL28 for its incredible delicacy and unusual character. A fermented washed coffee with an almost weightless mouthfeel, it’s light, elegant and wonderfully expressive, with soft grape notes, gentle fruitiness and tantalising touches of umami, superb stuff from Germany!

Ol’ochoy Farm is known for sustainable, forward-thinking farming and supporting smaller cooperatives, producing high-quality speciality microlots. Located in Kenya’s Rift Valley, coffee and tea thrive side by side at high elevation. This AA-grade coffee is Kenyan Washed, using a traditional double-fermentation process: ripe cherries are hand-selected, pulped, fermented twice, washed and soaked before slow sun-drying on raised African beds. The process can take up to three weeks, with careful grading by size, shape and density to ensure exceptional quality and consistency.

Mirra Coffee

(Kingston, USA)

Based in Kingston, New York, Mirra Coffee is the project of Will Warren, who set out in 2022 to bring a true Nordic-style roasting approach to the US. The focus is firmly on light, precise roasting that lets each coffee’s natural character shine, from sweetness and clarity to varietal and terroir. Around 80% of Mirra’s 2026 coffees have been sourced directly from producers, with the rest coming through a small network of trusted, passionate importers.

Mirra has been on our radar for a while, and we’re thrilled to feature them now. They’re providing us with a high-end Mexico coffee we’ve long sought. It starts with sweet agave nectar, followed by apple blossom and buttery hazelnut, then reveals juicy plum and lively fruitiness. Beautifully balanced and complex yet effortless, it offers classic flavors with remarkable clarity and charm.

Jesús’ plot sits at 1,500 masl in San Pedro el Alto, Oaxaca, where he grows Caturra and Mundo Novo with his wife and family. Caturra is a natural Bourbon mutation, first identified in Brazil in the early 20th century, and is prized for quality at altitude. Mundo Novo is a natural Typica-Bourbon hybrid from Brazil, valued for its cup quality and productivity and is characterized by high potential for cup quality, tall stature, and high productivity. It is, however, relatively susceptible to pests and diseases. Both varieties thrive at elevation.

Groundstate Coffee Roasters

Founded in Dublin’s Liberties in 2018 by Andy Joyce and Mark Quilty, Groundstate Coffee began as a unique café and yoga studio before opening its dedicated roasting house in 2021. Combining scientific precision with a calm, thoughtful approach, the team focuses on ethically sourced specialty coffees and careful roasting to highlight each lot’s character. Their commitment extends beyond the cup, working with local suppliers and Hometree to reduce their environmental footprint and plant native Irish trees.

We chose this Colombian Bio Reactor Nitro Gesha from their shiny limited edition range for its extraordinary precision and playful sweetness. Bright orange sherbet, delicate florals, gentle fruit juice and lemon cake come together in an exceptionally clean cup. An unusual process adds intrigue, while keeping everything beautifully balanced, approachable and delicious.

Grown by Andrés Quiceno at La Riviera in Risaralda, this coffee showcases Colombia’s new wave of experimental processing. Only peak-ripe cherries are selected before fermentation in a sealed, nitrogen-rich bioreactor, where oxygen, temperature, pH and sugars are carefully controlled and microbial activity precisely guided. The coffee is then precision-dried to preserve structure and clarity. The result is a remarkably intentional cup: bright citrus, soft sweetness and an exceptionally clean, precise structure.

Von & Vonnie

(Porto, Portugal)

Founded in Porto by Morgan von Mantripp and Yvonne Spresny, Von & Vonnie is a shared vision between two coffee lovers who met while travelling in Southeast Asia. Their café and micro-roastery puts fair, seasonal and transparent sourcing front and centre, with a particular focus on smaller producers who don’t always get the recognition they deserve. They’re big on long-term relationships and doing things better, while creating a welcoming café that brings their whole coffee journey together.

They purchased this exceptional Chiroso green specifically for us. We are thrilled to be working with such passionate people and were literally bowled over by this coffee for its effortlessly elegant character. It’s beautifully balanced, with gentle fruitiness leading into a sweet, nutty depth. Easy-drinking yet refined, with a wonderfully satisfying quality that keeps drawing you back for another cup. A genuinely happy coffee!

Jorge Rojas

Produced by renowned Colombian farmer Jorge Rojas, it comes from a one-hectare lot planted in 2020. Chiroso, an Ethiopian-Colombian cultivar, is prized for its florality, tropical fruit and herbal spice. Processed at La Roca, the coffee undergoes two-stage fermentation—24 hours in cherry, followed by 24 hours in mucilage after pulping—before being fully washed and carefully dried on raised beds. The controlled fermentation intensifies fruit complexity while maintaining clarity and avoiding excessive funk.
