While he is a professional commercial pilot, he realized that the true potential was in Colombia, specifically on his family’s farm during one of his trips abroad. This discovery led him to dedicate himself to specialty coffee production.\u003cbr\u003eThis Bourbon Ají begins with 36 hours of controlled fermentation. The cherries are then depulped before a second 48 hour submerged fermentation under aerobic conditions.
