Aromas of caramel, apple pie, and almonds. It feels mellow on the palate, with vivid notes of white grapes, green apples, and floral touches. A coffee with a very dense body and a prolonged end to cocoa and honey.

During our last trip to Colombia, we decided to focus our coffee search on the Department of Huila, considered one of the best areas in the country for the growth and good performance of the coffee plant. We work together with Coocentral, a cooperative that centers all its actions in the municipality of Garzón. Its main value is the total transparency, the traceability and be close to the producers, whatever their size and needs are, with the aim of establish a security in their economic status.

This is the case of Jaiber Joven, the producer behind of finca Aguas Claras, which he received as part of the inheritance that his father left him and where he currently lives with his wife and daughters. The cultivation of coffee is a tradition in the family since it has been its main economic activity. So much so, that they have always devoted all their efforts on improving the quality of their varietals. Although he already has a consolidated production, the untiring desire to develop new techniques in the processes have made the farm is in continuous development.

The process of this coffee begins with the collection and selection of the cherries by hand selecting only the ripe cherries. Right after, the fruit is depulped and left to a prolonged fermentation. Finally, Jaiber uses a type of drying called “paseras”, leaving some open spaces for the air to flow. The drying process is slow and the coffee beans are mixed several times a day for approximately 28 days.

It’s important to us that every person, being one link in the value chain, receives a fair return for the work they put in.

We do not pay prices that are dictated by the stock market but make sure the amount we pay, reflects the quality of the lots that we buy. In some cases, that can amount to 5 or even 10 times the price at world market level.
