- Ripe Fruit
Sweet wet processed coffee with winey fruit acidity and a smooth mouthfeel. Lots of pulpy ripe fruit flavor with coffee cherry, grape and chocolate flavors make a wonderful espresso.
FINCA LA ESPERANZA
Francisco Morales Carrillo owns the 19-manzana farm La Esperanza, which is planted with coffee on 93 percent of its land. Francisco grows several varieties of coffee, including Pache, San Ramon, and Bourbon among others. After the coffee is harvested ripe, it is sorted and depulped the sae day, then fermented dry for about 24 hours. Once it’s fermented, it’s washed about three times, until the mucilage is fully removed, and then Francisco spreads the coffee on concrete patios for 3–6 days, depending on the weather.
