- White Tea
“This is the best washed Ethiopia at all of our seasonal cuppings.”
Bjørnar, Collaborative Coffee Source
This coffee comes from the Hallo Faufaute washing station. Its name comes from the waterfalls that are the symbol of this city- Hallo. (faufaute means waterfalls) The station was founded in 2010 by Mr. Sigaga Beyene, who started buying coffee from small farms nearby.
Ripe cherries are depulped within eight hours of arrival. This is followed by 72h wet fermentation. The first 24 hours of the drying process take place on the nets, then on the raised beds. This process is quite prolonged and takes about 10 days.
