Description

This mico-lot comes from an experimentation: a slow drying process.

First, the cherries have been picked at their full maturity, then the coffee has been pulped and placed in tanks for a 48h fermentation.
Following, a 2h rinse and finally the bean, still in parchment, has been dried on shaded african beds.

This extended drying process of more than 14 days for a washed coffee, have made possible the expression of the delicacy and aromatic nuances of this exceptional coffee.

Its coffees are meticulously brewed across their seven cafés between Paris and Geneva, as well as through a network of professional partners who entrust Coutume for their coffee service.
